In following the Hard Break-In procedure, the instructions seem to be concerned with a manual transmission, not our beloved scoots.
Do we just run W.O.T. (wide open throttle) for five or so miles, roll off the throttle, coast to a stop on the side of the road for 10 minutes or so and repeat this procedure for a total of 4 runs to reach the 20 miles?

Sounds like a plan to me. Yeah you have to simulate it a little, if you don't have a manual clutch.

A five mile WOT pull is REAL SEVERE as the first step of a hard break-in. Bonneville salt flat racers don't even pull 5 miles at WOT without letting up. Did you read the hard break in article??? Including the section on dyno pulls, street and track break-in???
Please re-read the following excerpt (red added for emphasis) before you hurt your scoot:
"On the Street: Warm the engine up completely: Because of the wind resistance, you don't need to use higher gears like you would on a dyno machine. The main thing is to load the engine by opening the throttle hard in 2nd, 3rd and 4th gear.
Realistically, you won't be able to do full throttle runs even in 2nd gear on most bikes without exceeding 65 mph / 104 kph. The best method is to alternate between short bursts of hard acceleration and deceleration. You don't have to go over 65 mph / 104 kph to properly load the rings. Also, make sure that you're not being followed by another bike or car when you decelerate, most drivers won't expect that you'll suddenly slow down, and we don't want anyone to get hit from behind !!
The biggest problem with breaking your engine in on the street (besides police) is if you ride the bike on the freeway (too little throttle = not enough pressure on the rings) or if you get stuck in slow city traffic. For the first 200 miles or so, get out into the country where you can vary the speed more and run it through the gears ! "

I did the hard break-in on my Sym Citycom. I took it on a back country road, accelerated WOT from standstill to 30kph, close throttle quick and let engine compression get it back to stand still. Did this about 5 times and then upted the speed by about 5kph. Kept on doing this up to about 130kph indicated from memory (I did give an account somewhere on the forum, but can't find it). I put about 50kms on like that. Took it then on a mountain road and took sharp acceleration bursts to load up the engine and then stopped against compression, at the end I took a blast up the mountain and then ran it against compression down which was very steep and against compression the whole time.
